How does Siri learn?
Upon receiving your request, Siri records the frequencies and sound waves from your voice and translates them into a code. Siri then breaks down the code to identify particular patterns, phrases, and keywords.
During the setup of your device you are asked to speak a few phrases that begin with Hey Siri. This is explicit enrollment. Over time Apple adds utterances spoken by the primary user in real-world situations. This is implicit enrollment.
A small speech recognizer, however, runs constantly on the local device, listening for the words "Hey Siri." When the speech recognizer detects the phrase, it uses a deep neural network to convert the acoustic pattern of the user's voice into a probability distribution.
Its speech recognition engine was provided by Nuance Communications, and it uses advanced machine learning technologies to function. Its original American, British, and Australian voice actors recorded their respective voices around 2005, unaware of the recordings' eventual usage.
Siri basically collects information about us due to built-in apps in our devices. So, there's Siri "knowledge", and then there's "Siri Knowledge". Siri "knowledge": As had been alluded to, this would be the amalgamated and summarized "stuff" that gets surfaced to the user in response specific queries.

Train Siri
If Siri often misunderstands you, it may be time to train your assistant to better understand your voice. To do this, go to Settings > Siri & Search > Listen for "Hey Siri," and turn it off and then back on. You're prompted to set up "Hey Siri." Tap Continue, then say each phrase that appears on the screen.

Hold the Home button to activate Siri, and say something like “John Appleseed is my husband” or "Jane Appleseed is my wife." Note that Siri also recognizes other relationships such as partner, fiancé, girlfriend or boyfriend.
How do I get Siri to stop saying mmhmm?
You may not like it but the only way to prevent the um hm is to ask the question immediately after you say "Hey, Siri....".
This is definitely a bug. I've owned several iPhones that only recognized my voice for "hey siri". I just discovered this bug after buying my daughter an iPhone 11 and realizing that it responds to both of our voices after numerous retraining. iOS 13 continues to have bugs months after release.

The test found that Google Assistant answered more questions correctly than Alexa—or even Apple's Siri. After asking the same 800 questions to each smart assistant, Google Assistant understood 100% of the queries and answered 92.9% of questions correctly.
